What do you think when you taste something delicious? Actually, it’s more accurate to say how do you feel gradually after the first bite? Which emotions come to you? If your answer is “too simple”, probably the food you had was as well.
For me, the culinary experience is about the feelings and the experience of receiving these flavor explosions in your mouth, those flavors which instantly transform into pleasure in your body and soul, and which will lead you to the only logical next step: to crave for more.
Mexican food is rich in flavors and colors. Its mix of different spices and accentuation in strong flavors makes it unique and difficult to find in other parts of the world.
Enrique Olvera is one of most celebrated Mexican chefs around. As described by Jeff Gordinier from The New York Times, he is “a Mexican innovator”, two words than when put together make me smile.
Cosme is Enrique’s newest venture in the restaurant scene, and also its first opening outside Mexico City. He chose one of the toughest cities, but as a constant warrior, he was in for the challenge. The idea behind Cosme is Enrique’s vision to share the complexity and uniqueness that Mexican food represents.
As a real Mexican, I had to pay a visit and try it out. There is not better judge for Enrique than its own people, who know the flavors of our ‘Madre Patria’ as we call our country. My friend Madeleine and I had the pleasure to be one of the first people in NY to try the place. We started with two different variations of Pastor tacos, and Octopus in Atole sauce, to finish with sweetness in an Amaranto ice-cream (a real treat for those who love the seed). The end was a wonderful surprise since Enrique came to our table to greet us and share a glass of Mezcal from its private reserve in symbol of celebration.
